MENU PLAN MONDAY 7/9


Last week just flew by with the holiday breaking the days up. On the 4th we barbecued out with our neighbor who DH enjoyed chatting with. The chocolate cake was sinfully delicious and the coffee included in the recipe really brought out the chocolate flavor. I think I'm going to have to limit myself to making that cake only on my birthday as I just have no willpower against chocolate cake!

A couple of weeks ago I made some banana oat muffins that turned out rather healthy and tasty. Here's the recipe for BANANA OAT MUFFINS:



3/4 cup whole wheat pastry flour
3/4 cup quick-cooking oats
1 teaspoon baking powder
1 teaspoon ground cinnamon
1/2 teaspoon baking soda
1/4 teaspoon ground nutmeg
1 egg
1 cup mashed ripe bananas (about 2 medium)
1/4 cup packed brown sugar
1/4 cup buttermilk
1/4 cup butter, melted

In a large bowl, combine the first six ingredients. In a small mixing bowl, beat the egg, bananas, brown sugar, buttermilk and melted butter. Stir into dry ingredients just until moistened.Coat muffin cups with nonstick cooking spray; fill two-thirds full with batter. Bake at 400° for 15-20 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack. Yield: 1 dozen.


I enjoy cooking biscuits, eggs, waffles, muffins etc. at breakfast. But things can get pretty busy with everything that needs to be done. It was about two babies ago that I got a bit tired of spooning in bite after bite of baby food in the little mouths three to four times per day. So now I've become a bad mom and have come up with a way for Kabe's to drink her baby food at breakfast! I take her defrosted cubes of oatmeal/banana/avocado and mix them with some kefir and juice. Then I put it in a special sippy type cup and she's good to go! Here's a picture of her with the concoction. She really does like it though she has a slightly sour look on her face in this picture. I think I might have gone a little too heavy on the kefir for her liking! :)

Friday: Chicken Veggie Packets

I was wondering how you freeze your bread. The Herbed Swirl Bread sounds delicious and I was wondering if you had any tips on how to freeze bread.

Looks great! I love being able to pull something homemade from the freezer... I used to do more bulk cooking than I do now, and I need to get back into that habit. Enjoy your week!

I must be out of it--I had to google kefir to see what it was. It sounds great--and they might have it at my new favorite store--Sprouts--so I will have to check this week.

The muffins look wonderful,too--we all love fruity, whole-grain muffins! They make such a yummy, nutritious breakfast!

I got some of the kefir--very much like yogurt--but it has different bacteria? I think will go back and get more--it will be a yummy breakfast for me, too!

I'm glad you liked the kefir, JB! Yes, I think it's supposed to have a greater variety of beneficial bacteria than yogurt. It's fun to discover new things, isn't it? :)
